The hotel provides its estimated annual volume. mirume then identifies the appropriate farm and plot. A fixed annual contract is established, with payment made to the farmer before the harvest begins. From that point onward, tea from the designated plot is reserved exclusively for that hotel.

 The reasoning behind the advance payment matters. In Japan's tea industry, farmers who cultivate high-quality leaves have no control over their own pricing. The market sets the price, and the tea wholesale confirms it. A fixed contract with advance payment removes that dependency: the farmer knows their income before even a single leaf is picked, and can therefore focus entirely on quality.
