Strings Hotel Nagoya - Tea as Ingredient

Strings Hotel Nagoya introduced a mirume collaboration course in which tea appeared in four different forms within a single menu: smoked foie gras and mango churros finished with tea tree branch smoke, hojicha consommé soup, hitsumabushi rice cooked with hojicha, and roasted duck with rare tea sauce.

Tea appeared on the menu four times. Not once as a beverage.

Sustainability & tfp

Japan's tea market is undergoing a structural shift. Prices for lower-grade tea material have risen sharply, driven by demand for mass-market products.  At the same time, the market price for high-quality leaves has remained flat or declined. Under current market conditions, a farmer committed to quality takes on greater financial risk for less reward.

In this context, an annual fixed-price contract is not a gesture of goodwill. It is the structure that makes exceptional tea financially viable.

mirume’s contracts are set annually, with payment made to the farmer in advance, before harvest. With income secured before a single leaf is picked, the farmer can focus entirely on quality rather than watching the market.

This is not philanthropy. It is how mirume ensures that the teas it selects can continue to exist at the standard it requires.
